1-1oz pk of Sugar Free Fat Free Vanilla Pudding mix
1 tsp of vanilla
1/4 cup of creamy peanut butter
1 Cup of Chocolate Fiber One cereal
1-1/2 TBLS Coconut Oil
1-1/2 TBLS water
45 dark chocolate chips (like Ghiradelli 60% cacoa)
9 cupcake liners
Instructions
CRUST- In a food processor mix cereal till crumb
consistency. Add coconut oil and water and mix well.
Put cupcake liners in muffin tin and press crust
mixture with fingers on bottom of each liner evenly
distributing.
In a medium size bowl add cottage cheese, protein,
pudding mix, vanilla extract, and peanut butter.
Whip with mixer.
Scoop mixture evenly in on top of crust. Add 5 dark
chocolate chips on each cheesecake. Refrigerate
about 10-15 minutes to set. ENJOY~
