     Roasted Lamb Rack

Ingredients
2 Lamb Rack
Olive Oil for coating the racks
1 Tbls. Mustard Seeds
2 Teas. Oregano
Oven Roasted Potatos
6 potatos, cut into sedges
2 Tbls. Olive Oil
Salt and Pepper your taste
 
Place into Pre-heated 400 degree oven
for 25-35 minutes.
After 10 minutes put the rack in the oven with
For perfect timing of dinner.

Instructions
Brush the racks of lamb with oil and season with salt and pepper to taste. Scatter the mustard seeds and oregano on a plate and press the meat side of the lamb into the mixture to coat. Cover and refrigerate 1-2 hours or overnight.
Pre-heat oven to 400 Place the lamb racks in roasting pan meat side up, and roast for 12 - 15 minutes for medium rare, which will be the most tender and moist, or until cooked as you prefer. Medium rare temp. is 130 - 140
Transfer to a warmed plate , cover loosely with foil and allow to rest for 5 minutes.
Serve with oven roasted potatoes and a small salad
