Marinate chicken in 1 tbsp soy sauce, sesame oil, and garlic for 10 minutes.
Whisk hoisin sauce, 3 tbsp soy sauce, water, and sugar together. Stir fry chicken in pan over medium high heat until no longer pink. Stir in sauce mixture and spinach.
Add drained noodles to skillet. Cook and stir until spinach is wilted.
