     Carrot Cake

Ingredients
2 cups sugar
1 1/2 cups wesson oil
4 eggs
2 1/4 cups sifted flour
2 tsp. salt
2 tsp. cinnamon
2 tsp. soda
3 cups grated raw carrots
1 cup chopped nuts
 

Instructions
Combine sugar, oil, eggs. Beat and medium speed for 2 minutes. Sift dry ingredients. Add flour mixture at low speed for 1 minute. Add grated carrots and nuts. Grease and flour 9 X 13 pan. Bake at 300° for 1 hour.
Frosting- 1/2 stick oleo, 4 oz. cream cheese, powdered sugar, chopped nuts.
