     Sweet and Sour Pork and Vegetables

Ingredients
1 cup long grain white rice
2 tbsp hoisin sauce
1 tbsp lime juice
2 tbsp canola oil
2 carrots, cut into matchsticks
1 red bell pepper, cut into strips
1/2 lb pork tenderloin, thinly sliced
Salt and pepper
1 cup bean sprouts (optional)
 
2 scallions, thinly sliced on a diagonal

Instructions
Cook rice according to package directions. In a small bowl, whisk together hoisin, lime juice, and 1 tbsp water. Set aside.
In a large skillet on medium, heat 1 tbsp oil. Add carrots and bell pepper. Cook 4-5 minutes or until vegetables are just tender, tossing frequently. Transfer to bowl.
Return skillet to stovetop and heat remaining 1 tbsp oil over medium high heat. Season pork with 1/4 tsp salt and 1/4 tsp pepper. Cook 3-4 minutes or until browned, tossing occasionally. Add hoisin mixture and cook 1 minute.
Return vegetables to skillet. Add bean sprouts (if using) and cook, tossing, about 2 minutes or until heated through. Serve over rice and sprinkle with scallions.
