3 egg whites
175g (6oz) caster sugar
1/2tsp vanilla essence
1/2 tsp white vinegar
1tsp cornflour

Put egg whites in a clean bowl and whisk until
stiff. Gradually whisk in the sugar 1 tbsp at a
time until the mixture is smooth and shiny.
Put beater down to the lowest setting and fold in
gently the vanilla vinegar and cornflour.
Spread mixture onto parchment paper (baking paper)
in a circle. Make a dip in the middle with the
back of a spoon.
Bake in a 150deg oven for 1 hour until crisp and
dry.
Leave pavolva in switched off oven until
completely cold.
Peel off meringue base from baking paper and put
on a serving plate. Beat cream and spoon onto the
pavlova. Add fruits on top.

fruits ...... mango / pineapple / pears /
strawberries / berries / kiwis
300ml whipped cream
|

For a Banoffee version - add cream and bananas and
make the caramel syrup with Cream (100ml) - 2tbs
Golden syrup and 50g brown sugar. in a pan let
simmer for 5-7 mins till a caramel consistency.
