     Spinach and Cheese Strata

Ingredients
2 10-oz packages of frozen spinach (thawed)
1 1/2 C finely chopped onion (1 large)
3 Tbsp butter
1 tsp salt
1/2 tsp black pepper
1/2 tsp nutmeg
8 C cubed French or Italian bread
6 oz coarsely grated Gruyere (1 C)
2 oz finely grated parmesan (1 C)
 
2 3/4 C milk
9 large eggs
2 tsp mustard

Instructions
Chop spinach; cook onion in butter until soft. Add half of the salt, pepper, and nutmeg; continue to cook and stir. Add spinach, stir, then remove from heat.
Spread 1/3 of the bread crumbs in a buttered 3-qt dish; layer with spinach mixture and cheeses.
Whisk together milk, eggs, mustard, and remaining salt and pepper; pour evenly over strata. Cover with plastic wrap and chill for at least 8 hrs.
Bake strata at 350F for 45 to 55 minutes. Let stand 5 minutes before serving.
