Pastry
400g Self Raising Flour
200g Margerine
100g Caster Sugar
lemon peel
1 teaspoon Vanilla Essence
2 eggs
1 teaspoon Lemon Juice
Mix flour and Margerine until they resemble
breadcrumbs. Add sugar, lemon peel, juice and
essence. Gradually add the beaten eggs slowly
until u have a dough. Wrap in Clingfilm and leave
to rest.
I do it by hand and very easy
For filling i use ready made mince jar plus I add
some more raisins, walnuts and a grokk of Whiskey.
