     Pumpkin Soup with Barley

1 kilo Pumpkin 2 carrots 2 marrows 1 potato 1 green apples cut in small cubes 1 cup barley 500ml chicken or vegtable stock ( u might need to add more water) 1 leek 1 onion 1 teaspoon curry 1 teaspoon nutmeg 1 teaspoon tomato paste some bacon or pancetta optional Method I chopped the pumpkin in cubes and roasted them. Fry onion, leeks and bacon if using together in a bit of olive oil . add the spices and fry for a few minutes, add all the vegtables and keep stiring. add the tomato paste and stock and when its boiling add the barley and apple cubes, reduce heat and leave to simmer. When ready i Liquidize it a bit . A very good soup especially on a cold day.
