     Oxtail Vegetable Soup

Ingredients
2 lb. oxtails 1 1/2 in lengths
3 tbsp. flour
2 tbsp. cooking oil
1 -16oz. can tomatoes cut up
1 -10 1/2oz. can beef broth
1/2 cup H20
1/2 cup dry red wine
1 medium onion
1 tsp. sugar
 
1/2 tsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
1 bay leaf
4 medium carrots cut in strips
4 medium parsnips
1/2 cup frozen peas.

Instructions
Trim fat from oxtails. Coat with flour. Brown. Add tomatoes and other ingredients. Bring to boil. Cover and simmer 2 1/2 hours. Skim off fat. Add vegetables. Cover and simmer 25 minutes. Stir in peas. Cook 5 minutes.
