     Italian Wedding Soup

Ingredients
1 -10oz. frozen chopped spinach
1 tsp. olive oil
1 large onion chopped
2 ribs celery chopped
10 baby carrots chopped
1 tsp. minced garlic
1 tsp. Italian seasoning
6 cup chicken broth
30 Italian style meat balls
 
1 can cannellini beans
3 tbsp. grated Parmesan cheese
1/4 tsp. pepper
1 large egg

Instructions
Defrost spinach, drain. Heat olive oil and add onions, carrots, celery, garlic and seasonings. Stir until onion is tender. Add brother, bring to boil. Add well drained spinach and meatballs. Drain and rinse beans and add to pot. Cook slowly until meatballs are heated through. In small bowl mix cheese, salt, pepper and egg. Whisk with fork and then add to soup. Stir and cook until slightly thick.
