Heat oil in a saucepan and fry chopped onions
until transparent ,add the diced marinated chicken
,I used boneless chicken thigh which was marinated
in lemon juice,garlic and tandoori curry paste.
Fry until cooked,added some hot madras curry paste
to make it spicy then I added some diced carrots
and frozen peas and some asian mix frozen veg and
I added some frozen spinach as well. Let it fry a
bit ,added some raisins and then a can of crushed
tomatoes(polpa) and let it cook for a few
minutes,Then I added the rice (1 cup rice-2 cups
water or stock) but I put half a cup less water as
there was the crushed tomato and there was already
some juice. Covered and let it simmer until all
water was absorbed . When it was ready I mixed in
some roasted whole almonds.
