     Fruit Tea Cake

Ingredients
300g mixed dry fruit .For this cake I used a 250g mixed pkt of exotic fruits and 100g sultanas
It can also be a mixture of dried fruit and nuts.
250ml strong unsweetened tea
juice of 1 orange or lemon
1/2 cup of Kinnie or another type of soda
optional a 1/4 cup of rum,brandy etc of your choice ,in my case as I cannot cook with alcohol
I used rum essence
1 egg
2 cups sifted self raising flour
 
1/2 teaspoon cinnamon or mixed spice
1/2 cup sugar used it because exotic fruit was not so sweet but if using dried apricots ,dates
,prunes they will be sweet enough so if you wish no need to add sugar.
orange or lemon zest.

Instructions
Put the dried fruits in a big bowl and pour the orange juice,kinnie,hot tea and alcohol or essence if using. lEt it soak for about 2 hours or more ,even overnight. Preheat oven to 160C ,gas 4. Add the remaining ingredients to the soaked fruit and mix well until flour is well incorporated . Put the batter in a lined loaf tin. I also made 6 cup cakes with this batter. Bake for about 50 minutes ,check with skewer. Cup cakes were ready in about 25minutes . If you bake in a larger tin it might take less so check on it.
