     Ross il-Forn (Baked Rice)

Ingredients
750 g minced beef
1 large onion chopped
2 cloves garlic minced
2 teaspoons hot or mild curry according to taste
1 teaspoon allspice
3/4 large tin tomato paste
1 tin or pkt tomato passata
750g long grain rice
1.50ltr water
 
seasoning
2 teaspoons sugar
2 eggs
1 cup milk or cooking cream
grated cheese I used romano & cheddar

Instructions
In a big pot heat oil and fry the onion and add the curry and allspice . Then add the minced beef and fry until it browns and add the minced garlic. Add the tomato paste ,stir and let it cook a bit ,pour in the passata and the 2 teaspoons sugar. this brings out more the flavor of the tomato paste and passata. Add the rice and mix in the sauce and pour the water (can also use stock) Season and when it starts to boil ,put on a low flame and simmer until water is absorbed. In a bowl or jug mix the eggs and milk or cream. Do not add at once or else the eggs will curdle,I find that mixing some of the hot rice mixture to the egg and cream or milk mixture then adding it prevents this. Mix well and add half the grated cheese . Put in a greased oven dish ,sprinkle the remaining grated cheese and black pepper. Bake in a 190C oven until its firm . I do not add a lot of eggs because my family do not like it very dense .
