     Bombay Potatoes

Ingredients
Parboiled potatoes cut into halves or in 4.
3 tablespoons vegetable oil
1/4 cup butter
juice of half lemon
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 teaspoon turmeric
1 tablespoon garam masala
1/2 teaspoon dried dill tops or chopped fresh dill
 
(you can use your fave Indian spice,curry mix ,chili if you like it extra hot or herbs)
salt and pepper.

Instructions
Heat oil in a large frying pan or wide saucepan. When its hot add the cumin & mustard seeds,they will splutter so cover. Then add the spices and mix and fry for about 2 minutes. Add the butter and stir until it melts then take off heat and toss the potatoes in the spices ,season with salt and freshly ground pepper. Put the potatoes on a baking tray or dish pour the lemon juice on top,sprinkle the dill tops or chopped fresh dill and bake until its golden .
