     Yogurt,Apple and Prune Cake with Cinnamon Topping

Ingredients
2 cups plain white yogurt
2/3 cup olive or vegetable oil
3 eggs
1 and 1/2 teaspoon vanilla
1/4 cup fresh lemon juice and grated zest of a lemon
4 apples cut into chunks about 1/2 inch pieces
1 cup sugar
2 and 1/2 cups flour
2 and 1/2 teaspoons baking powder
 
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
20 stoned prunes
topping- 2 teaspoons mixed with 1/2 cup soft brown sugar. 1 tablespoon softened butter

Instructions
Preheat oven ,160C and grease a 13in by 9in cake dish or tin In a bowl mix the liquid ingredients and stir in the chopped apples. In another bowl sift the flour,baking powder & baking soda. Add the sugar ,grated lemon zest,salt & cinnamon. Pour the liquid mixture over the dry ingredients and mix with a wooden spoon until it is smooth do not over beat. Then spread half the batter in the dish and place the prunes over the batter then sprinkle 1/4 of the cinnamon & brown sugar over the layer. Mix the cinnamoSpread remaing batter and smooth over. n and brown sugar with the butter and put small pieces of this mixture on top . Bake for about 40-50 mins ,if you see that top is browning yet its still not ready when you Let it rest 15 minutes before serving. Can be served with warm custard . check with toothpick or skewer cover top with foil .
