First prepare the spices in a small bowl-
1 teaspoon turmeric,
2 teaspoons ground coriander,
1 tablespoon ground cumin,
1/4 teaspoon cayenne pepper,
1teaspoon cinnamon,
2 teaspoons paprika (hot or sweet according to
taste)
1/2 teaspoon pepper,1 teaspoon salt.
6 chicken thighs
1 aubergine
3 green peppers or yellow and red
2 zucchini
5 garlic cloves (less or more according to taste)
2 large onions
olive oil
1 lemon grated zest and juice

Chop all the vegetables in 1 inch pieces and slice
the garlic.
Put about 3 tablespoon olive oil in an oven dish
and put the vegetables in the dish.
Drizzle some more oil over the vegetables then 3/4
of the spice mix and mix everything,I find it best
to do it with my hands .
Then rub the remaining spice mix over the thighs
and place over the vegetables.
Sprinkle the lemon zest and juice . I added a
preserved lemon in salt ,rinsed it then cut it in
quarters .(this is optional)
Put in a preheated 200C oven and after 20mins (set
timer so you do not forget) mix the veg and turn
the chicken over.
Leave for about another 20 minutes and turn over
chicken thighs so they brown .
Cooking time depends on your oven.
