Stuffed marrows ,green peppers and tomatoes
.Stuffing is made with rice that I rinse then soak
in hot water for about 1/2 an hour. Finely chopped
parsley,onion,garlic,cumin,turmeric
,coriander,lemon juice,olive oil and minced lamb
or beef .I do not cook the minced meat. I use this
stuffing for aubergine ,onions and potatoes or
cabbage leaves,then I cover saucepan base with
sliced potatoes or cabbage leaves and layer
stuffed veg over it, then pour stock up to 1/4
full close and cook on cooker. Can be done same
way in a deep casserole in oven,cover with lid or
foil .
