In a large saucepan heat some oil and start by
frying the onions and anchovy fillets if using it.
Then add the eggplant and marrows and carrots and
garlic,fry for a few minutes.
Add the remaining vegetables ,mint and chili
flakes if you are using it.
Season well with lots of black pepper and salt to
taste.
Let it simmer uncovered on low heat until
vegetables are cooked .
Add the drained tuna and simmer for a further few
minutes.
When ready turn off heat and let it cool a bit
before making the pies.
Line the pie dishes and fill with the spinach veg
tuna mixture.
Brush the pastry top with beaten egg wash and
sprinkle sesame seeds .
Bake in 180C oven until pastry is golden .
