500g vermicelli cooked ,drain then run cold water
over it to fast cool it. Strain well. Mix 6 eggs
,seasoning. I fry finely sliced onion & lots of
chopped garlic then add it to the vermicelli &
eggs . Mix well then heat a non stick plate size
frying pan and cook individual servings. From this
recipe I make 5 . You can top with grated cheese
when you flip it over and it will melt .
You can be creative and add left over diced roast
chicken or bacon etc and add some spice like
turmeric or cumin or curry, or instead of onion
you add leeks .
