For the cake sift 2 cups flour,add 2 cups sugar,2 teaspoons baking soda,1 teaspoon baking powder, 3/4 cup cocoa and ! teaspoon salt. To it add 1 cup oil ,1 cup milk,2 beaten eggs , 1 teaspoon vanilla and 2 teaspoons instant coffee melted in a cup of boiling water. NB water needs to be boiling for this chocolate cake recipe. Mix well then pour in a greased tin ,I used a springform tin ,or divide between 2 baking tins .The mixture will be runny . Bake in a medium hot oven 160C fan electric oven until when you check with a skewer it comes out clean. This is one of the best ,easiest recipes Ive found to make a moist light chocolate cake .As easy as making one from a packet ;)
Then while still warm from the oven with the handle of the wooden spoon I made holes on the cake top and I poured over it a tin of nestle ready caramel which I had heated in a saucepan. Let it set then I chopped roasted walnuts & hazelnuts mixing with a teaspoon of cinnamon and sprinkled them over the caramel. Heated nutella and poured it over and let it set and harden. For the cream topping I beat mascarpone with 1 pkt cream topping added vanilla and 1 tablespoon icing sugar. I spread it then decorated . Chilled in fridge then took out of spring form .
