     Maltese Bread Pudding

Ingredients
2 day old Maltese loaf
1 tin of evaporated milk
2 eggs beaten
4 heaped tbsp cocoa powder sifted
175 grms sugar
a handful of sultanas or raisins (I prefer sultanas)
grated rind of a lemon and an orange
level tsp cinnamon
50 grms each finely chopped apricots and dates and walnuts (some like almonds, I prefer walnuts)
 
70 grms good quality dark chocolate roughly chopped
2 tbsp either marsala, sherry or brandy (some prefer whisky)
Additional couple of tablespoons caster sugar

Instructions
Take the bread and place it in a deep pan and cover with water and leave for a minimum of 3 hours or overnight. The bread will be really soft and now you need to pour out the excess water from the pot and with your clean hands squeeze bread in a sieve. The bread won't look appetising but soldier on! Once the water has been extracted place bread in a large bowl and add milk, sugar and eggs.
Mix with hands then add cocoa powder and mix well. Finally add remaining ingredients and once all are thoroughly mixed pour into a greased dish and sprinkle additional sugar on top to form delicious crust. Bake in fairly hot oven for about 45 minutes or until a knife inserted in the centre comes out clean.
