     Fancy Filled Applesauce Spice Cupcakes

Ingredients
Cupcake Recipe- (subject to change for texture)
3 & 1/4 cups flour
1 & 1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon baking powder
1/2 cup margarine or butter
 
2 cups brown sugar
2 eggs
2 cups applesauce
1/2 cup chopped walnuts

Instructions
Preheat oven to 350 degrees F. Combine 1st 7 ingredients in a bowl and set aside. In a mixing bowl, beat butter with mixer for 30 seconds, add brown sugar and beat until well combined. Add eggs, one at a time, beating 1 minute after each. Add mixed dry ingredients from step 2 and apple sauce alternately to beaten mixture, beating on low speed after each addition. Stir in chopped nuts. Scoop into sprayed muffin tins. Bake 25 minutes or until done.
Candied Walnuts for Garnish- Ingredients- 1/2 cup coarsely chopped walnuts, 1 tablespoon butter or margarine, 1/4 cup brown sugar Directions- Melt butter in small skillet. Add walnuts and brown slightly. Add brown sugar and continue to cook and stir until walnuts are thoroughly coated and brown sugar has melted. Pour out onto wax paper or cutting board to cool, separating walnuts with spatula or spoon to keep them from sticking together. Cool completely and set aside for garnish. Spiced Whipping Cream for Filling/Frosting- Ingredients- 2 cups heavy whipping cream (chilled), 1 teaspoon pure vanilla extract, 2 tablespoons granulated sugar, 1 teaspoon cinnamon Directions- Measure whipping cream, vanilla, and sugar into mixing bowl and mix slightly. Place in refrigerator for 20-30 minutes to chill along with whisk attachment. Remove from refrigerator and beat until soft peaks form. Add cinnamon slowly and mix in. Once cinnamon is completely incorporated, whip till stiff peaks form.
Caramel Sauce- Ingredients- 1 can sweetened condensed milk Directions- Place sweetened condensed milk in a microwave safe bowl (8 cup size). Place in microwave on 50% power for 2 minutes. Stir briskly. Continue to microwave on 30% power, stirring every 1-2 minutes until thickened and golden colored (an additional 10-15 minutes). Allow to cool before placing in dispenser.
To assemble- Place bismark or piping tip on bag/dispenser and fill with spiced whipped cream. Change to rosette tip and frost tops of cupcakes with spiced whipped cream. Drizzle caramel sauce on plate and place cupcake in the center of the plate. Drizzle caramel sauce over spiced whipped cream on the cupcake. Make a spice whipped cream rosette on side of plate. Sprinkle cupcake and rosette with candied walnuts. Place 2-3 small strawberries or raspberries on/by the whipped cream rosette. Serve to guests!
