Put pickling salt over red part of melon in bowl and let set overnight. Drain next morning. Then mix-
1 c. sugar 1 c. vinegar
1 c. water 1 level Tbs. pickling spices
Bring to a boil and boil 25 minutes; put in sterile jars and seal. To seal, boil in hot water bath for at least 15 minutes.
