Put 3 tblsp of oil in deep pan and add a finely
chopped onion, 3 cloves of finely chopped garlic
follow once the onion is translucent. Also add
very finely chopped fresh sage and rosemary mixed
with a little salt. Prepare some broth made with
chicken cubes and water in another container. Add
farro to onion. Stir and add a ladle of broth and
continue to stir. Then add enough broth to cover
the farro and the same measure again. Stir every
now and then for 45 minutes. Meanwhile take half a
can of borlotti beans and blitz and keep to the
side. Add the rest of the beans to the faro and
add white pepper. If not cooked after 45 mins add
a ladle of broth and continue cooking for further
5-10 min. Add 2-3 tbsp of passata just 2 mins
before you take off fire. Add the blitzed beans
just before serving. Serve faro finely drizzled
with ex vir olive oil and with toasted bread that
has been rubbed with garlic and oil.
