For supper I was going to make a fish pie with
mashed potatoes on top but then I decided to cut
the peeled parboiled potatoes in slices and placed
them in the bottom of a greased oven dish,then
over them I put some simple tomato sauce made by
sauteeing some garlic and adding a large packet of
thick tomato juice (passata ) and adding some
oregano to it and simmered. In the mean time I
fried some onions and chopped green peppers and
garlic and added bite size cut pieces of fish
fillets ,some sliced olives,capers,cayenne pepper
and chopped fresh

mint,seasoning and a small packet of cooking cream
. I poured half the tomato sauce over the potatoes
and over it some thawed spinach ,then the fish in
the white sauce ,over it some more spinach then I
topped with slices of grilled aubergines, Over the
aubergines I poured the rest of the tomato sauce.
On top I beat 1 egg and some milk and sprinkled
crushed potato crisps and grated cheese. Baked in
a 180 C oven until top was golden .
