     Cauliflower Crust Pizza

Ingredients
1/2 large head cauliflower (makes about 2 cups grated cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese
Pizza sauce (pasta sauce or marinara sauce)
Garlic powder
Red pepper flakes
Dried oregano
Fresh or dried basil
Salt and pepper

Instructions
1. Shred cauliflower into small crumbles by grating or with a food processor. Be careful NOT to make a puree. Place in a large bowl. 2. Microwave for 8 minutes without adding anything. 3. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before attempting the next step.
4. Once cauliflower is cool enough to handle, wrap it up in the dish towel and ring the heck out of it. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly mess. (You may use paper towels if nothing else is around).
5. Preheat oven to 450F. 6. Spray cookie sheet with nonstick spray. 7. Add the egg, 1/2 cup shredded cheese, garlic powder, salt, pepper, oregano, and red pepper flakes into cauliflower and mix well. 8. Pat the crust on the pan as desired - should not be a very thick crust. 9. Bake for about 15 minutes, until starts to turn golden brown. 10. Remove from oven. 11. Add pizza sauce, cheese, and desired toppings. 12. Bake for 5-10 more minutes, until cheese is melted and starts to turn golden brown. 13. Remove from oven and top with basil.
Toppings ideas- Chicken, bacon, spinach, mushrooms, green peppers, minced garlic, anything you can image on a pizza!

Should be about 100 calories per slice if have 9 slices
