     Roasted Sliced Potatoes

Slice onions ,green,yellow & red peppers thin slices,shopped garlic and put in a roasting tin.Sprinkle some sweet paprika,freshly ground pepper and salt. Scrub potatoes,slice not too thick,put in a bowl and season and add about 2 tablespoons olive oil and mix well. Then layer over the onions and peppers.
Sprinkle pepper,salt,chopped garlic and paprika over each layer. On the top layer sprinkle some fennel seeds ,I used ground fennel seeds. 1/2 cup water ,more or less depending on the amount you are cooking and bake in a preheated 200 C oven until potatoes are done and crunchy on top.
