1. Spread out sweet potato onto a tray, so none overlap. Lightly coat with cooking spray. Cook at 425 for 30 minutes, flipping occasionally. Alternatively, microwave for 5-7 minutes.
2. Top each round with a tablespoon of avocado and a tablespoon of salsa.
3. Enjoy.
