8 tomatoes, seeded, de-veined and chopped into small pieces
2 cloves of garlic, minced
6 tablespoons finely chopped fresh basil
1/2 cup extra virgin olive oil
salt and fresh ground pepper to taste

extra virgin olive oil
Instructions
Combine tomatoes, garlic, basil, 1/2 cup olive oil
in bowl. Season with salt and pepper to taste.
Cover and refrigerate for at least one hour, up to
one day, and let flavors marinate. Before serving,
re-taste and adjust seasonings as needed.
Slice bread into 1/2 inch slices. Lay slices in one layer on a baking
sheet. Brush both sides of slices with extra virgin olive oil and
sprinkle with salt. Broil one side until lightly golden and then flip
slices. Broil other side until lightly golden.
Top each slice with one big spoonful of bruchetta and serve immediately.
Yummy additions-
1) Top toasted bread with fresh mozzarella and broil just until melted.
Then top with bruchetta and serve.
2) Add chopped grilled chicken to bruchetta and serve as entree.
