Southern Green Beans
3 to 4 slices of bacon (or you can use ham)
1 small onion, coarsely chopped
1 bag of frozen green beans (if you use fresh, blanch for 5 to 10 minutes, first)
6 tiny new yukon gold or 3 small potatoes, peeled and cut into pieces
1 can of petite diced tomatoes (optional)
1/2 cup chicken stock
1-2 cup water
Kosher salt and freshly cracked black pepper, to taste
Instructions
Using kitchen shears, cut up the bacon directly into a large saucepan (or cut ham into bite size pieces) and cook over medium high heat until it begins to brown. Add the onion and cook until softened, stirring occasionally.
Saute frozen beans in the cooked bacon and onion for a 5 or 10 minutes. Peel and cut up potatoes, add to the beans. Add tomatoes if desired. Pour in chicken broth and water to cover. Bring to a boil, reduce heat, salt and pepper, cover, and let them low simmer for about 20 minutes, or until potatoes are tender.
