     Mom's Chili

Ingredients
1 1/2 to 2 lbs ground beef
1 large onion, chopped
4 cloves garlic, crushed or chopped
1/2 cup chopped celery
1/2 cup chopped green pepper
1 jalapeno pepper, seeded and chopped (wear gloves)
1 large can crushed tomatoes (28 oz)
3 tablespoons medium chile powder, like ancho chile (not chile powder mix like McCormack)
2 teaspoons dried oregano
 
2 teaspoons cumin
1/2 teaspoon chipotle powder (adds heat- optional)
1 knorr beef boullion cube or 2 teaspoons beef Better than Bouillion
1 can black beans or red beans, drained
2 teaspoons smoked salt (can substitute regular)
1/2 teaspoon fresh ground black pepper
1/4 cup chopped cilantro

Instructions
Saute ground beef in heavy saucepan until well done. Drain off the fat and put beef in a bowl. In the same heavy pan saute onions, garlic, celery, jalapeno, and green pepper in a tablespoon of olive oil or vegetable oil until soft. Add back the browned ground beef and add the tomatoes, chili powder, cumin, oregano, and bouillon. Simmer for 1/2 hour.
Taste and adjust chili seasoning with salt and pepper. Add extra chile powder if needed, varying the heat level with the type of chile powder you use. Stir in beans and simmer 15 more minutes. Stir in cilantro for last few minutes. Enjoy!
Serving Suggestions
Serve with grated cheddar and chopped red onions on top if desired.
