     AMERICAN INDIAN FRY BREAD

Ingredients
2 c. flour
1/2 c. non-fat dry milk, powdered
1 Tbs. baking powder
3/4 tsp. salt
2 Tbs. shortening
3/4 c. lukewarm water (110 degrees)
shortening for fat frying
 

Instructions
In a bowl, stir together flour, dry milk, baking powder and salt. Cut in the 2 tablespoons shortening until mixture resembles course crumbs. Stir in the water mix until dough clings together. Turn out on a lightly floured surface. Divide dough into 8 balls. Cover and let rest 10 minutes. On a lightly floured surface, roll each ball into a 6 or 7 inch round. Cover with dry towel while frying. In a large skillet, place 1 dough round in 1 1/2 to 2 inches of hot shortening. Turn as soon as dough rises to surface, fry about 1 minute, turn again and fry 45 to 60 seconds more until puffy and golden brown. Drain on paper towels. Keep warm on a shallow baking sheet in oven turned on warm. Serves 8.
