     GRANDMA SCHMEIDLER’S CINNAMON BREAD

Ingredients
1 pkg. yeast
1/4 c. warm water
1/4 c. butter
3 Tbs. sugar
1-1/2 tsp. salt
1 c. milk, scalded
4 to 4-1/2 c. sifted flour
1 egg
1/4 c. sugar
 
1 1-2 tsp. cinnamon

Instructions
Soften yeast in water. Add butter, sugar, salt to scalded milk, cool to lukewarm. Beat in 2 cups flour. Add yeast and egg; beat well. Add remaining flour and knead until smooth. Cover and let rise until double in bulk. Punch down, let rise 10 minutes. Roll into rectangle 9 x 18 inch. Sprinkle with sugar and cinnamon. Roll as for jelly roll, seal ends. Place in Pam sprayed 9 x 5 inch loaf pan. let rise until double in bulk. Bake at 375 degrees 35-40 minutes or until top is browned.
