     Herb and Cheese Oven Fries

Ingredients
1 russet potato per person cut into thin wedges
2 tb extra-virgin olive oil per every 3 potatoes
1 tsp dried Italian seasoning per 3 potatoes
salt and pepper to taste
1/2 cup parmigiano-reggiano grated per 3 potatoes
 

Instructions
Preheat oven to 500 degrees.
Coat potato wedges in olive oil. I found the easiest way to coat them all was in a bowl. Drizzle oil over potatoes and stir until they are all coated.
Place wedges on a cookie sheet.
Season with Italian seasoning, salt, and pepper.- Roast 15-20 minutes. Turn potatoes. Sprinkle with cheese liberally and roast another 10 minutes.
