     Fruity Baked Oatmeal

Ingredients
3 cups quick-cooking oats
1 cup brown sugar packed
2 tsp baking powder
1 tsp salt
1/2 tsp ground cinnamon
1 banana mashed (instead of 2 eggs beaten)
1 cup soy milk (instead of skim milk)
1/2 cup olive oil (instead of butter)
3/4 cup tart apple chopped
 
1/3 cup peaches chopped (fresh is better)
1/3 cup blueberries

Instructions
Preheat oven to 350 degrees.
IN a large bowl, combine oats, sugar, baking powder, salt, and cinnamon. Combine the banana (eggs), milk, and oil (butter) in a separate bowl. Add wet ingredients to dry ingredients and mix well!
Stir in fruit. Pour into an 8 in. square greased baking pan. Bake for 35-40 minutes or until knife comes out clean. Cut into squares.
