     LENTILS MEXICANO

Ingredients
1 c lentils, rinsed & drained
½ c chopped onion
2 c water
2 cloves garlic, minced
14 oz can of diced tomato
8 oz can tomato paste
4 oz can diced green chiles
1 c chopped mushrooms [optional]
1 Tbl oil [I use PAM]
 
1 teas cumin
½ teas salt
1 teas Mrs. Dash [I eliminate]
1 Tbl parsley
2 c grated Cheddar or Monterey Jack cheese
corn chips or pita

Instructions
Simmer lentils & water for ½ hour, until tender. Drain & set aside. • * I use PAM • ** I eliminate
Saute onions & garlic in oil. Stir in seasonings (except parsley), tomatoes with liquid & tomato paste. Simmer for about 10 minutes to blend flavors. Add lentils & simmer 5 minutes.
Spread mixture in a 9” x 13” pan. Top with cheese & parsley. Bake at 325 for about 35 minutes, until bubbly.
Serve with chips or pita cut in wedges.
Serving Suggestions
We serve this as a main dish. The original recipe called it an appetizer.
