1. Preheat oven to 350F.
2. Slice zucchinis width-wise, about 1/4 inch thick.
3. Place in a large bowl and drizzle with olive oil.
4. Mince the garlic into the bowl and mix well, making sure each
piece has oil on it.
5. Place each piece on a baking sheet (I lined it with foil). No
greasing required because zucchini is already covered in oil. The
slices do not have to be separated, they can touch each other and
even be placed on each other a little bit. Make sure all the garlic
left in the bowl gets on the zucchini slices.
6. Sprinkle with pepper, a little salt, and parmesan cheese.
7. Bake for 30 to 40 minutes.
8. Can increase temperature to 375 or 400 to speed up browning
in last 10 minutes.
