     Pan-Braised Chicken with Veggies

Ingredients
olive oil
2 chicken breasts
1/4 small onion, chopped
1 tomato, chopped
1/2 red bell pepper, diced
1/2 zucchini, sliced thinly or diced
mushrooms, sliced
1 garlic clove, crushed
1/2 small fresh chili, seeded and diced, or 1/2 tsp chili flakes
 
1 tsp dried oregano or basil
salt and pepper
1/2 C chicken stock

Instructions
Heat oil in a large skillet. Saute` chickwn for about 5 minutes a side until golden brown.
Add veggies, chili, and salt and pepper. Mix well.
Pour in stock, bring to a boil, then reduce to a simmer. Cover and cook for 45ish minutes, occasionally turning chicken.
Transfer chicken to a serving dish and keep warm. Increase sauce heat to high and boil hard to thicken and reduce. Spoon over chicken and serve.
