     Quinoa Black Bean Casserole

Ingredients
1 cup cooked red quinoa (cook 1/4 cup dry)
1 can black beans
2 sweet potatos
1 cup shredded cheddar cheese, divided into halves
1 tbsp. cumin
liberal pinches of salt and pepper
2 eggs (or 2 tbsp. flax meal - 6 tbsp. water)
1 cup salsa
cilantro, for garnish
 

Instructions
1) Preheat oven to 350°F. Coat casserole dish with Pam.
2) In a large bowl, mix together quinoa, black beans, sweet potato, and 1/2 a cup of the cheese, plus the spices.
3) In a small bowl, mix together the eggs and salsa. Add the wet to the dry and combine, then pour into casserole dish.
4) Sprinkle the remaining 1/2 of cheese over the casserole mixture, then bake, uncovered, for 30 minutes. Garnish with cilantro.
Serving Suggestions
Per serving- 200 calories
