Sautee 3 strips of bacon in large pot over medium heat until
crisp. Set bacon aside and use drippings for soup. Add carrots
and onion and. Cook over medium heat until soft and
translucent. Add garlic and sausage and cook, stirring until
sausage is lightly browned.
Add potatoes and broth, stir to combine. Bring to a boil over
medium heat, reduce heat and simmer, uncovered about 15
min (potato will be soft with fork).
Add greens, cream and salt and continue to simmer along with
an additional couple of slices of bacon, cut. Simmer for 15 min.
Add hot sauce and black pepper. Garnish with bacon bits.
