Preheat oven to 275F(convect)- Remove the skin on the back of the ribs(a knife can be helpful in removing it, it should peel right up after you have a good grip)- then lay both sheets of foil on a pan(I like to use a broiler pan)then put ribs on top

Oil both sides of ribs, put salt on the back of the ribs, on the top of the ribs put salt and pepper. - I like to put a thin layer of BBQ sauce on top of the ribs before putting them into the oven - I also put a small amount of water in with the ribs, fold up the foil one layer at a time.

Convect bake at 275F for 2hrs & 15mins - Once time is up, open foil and take a fork and see if the meat pulls off the bone easily(at this point it should) if it does then put a good layer of BBQ sauce on ribs - put back into oven until BBQ sauce seems to have darkened slightly(maybe 5mins) - then again put a layer of BBQ sauce on ribs and let cook for another 5mins or so - take ribs out and let settle for a minute.

I like to serve my ribs with white basmati rice and either green beans or a fresh green salad!!
