     Funfetti Cream Cheese Protein Cupcakes

Ingredients
CUPCAKE DRY INGREDIENTS
1 scoop vanilla protein powder
1c whole grain oat flour
1/4c granulated zero calorie stevia sweetner
1/4t baking soda
1/2t baking powder
1/4c stevia
1/4t baking soda
1/2t baking powder
 
1/8t salt
3 tbsp sprinkles
WET INGREDIENTS
1 egg
1/4c applesauce
1/4c nonfat plain kefir
1/4c greek
1/2t vanilla extract

Instructions
Cream Cheese Icing- 1.5 scoops vanilla protein powder 16g sugar free cheesecake pudding mix 5 drops sweetleaf vanilla stevia 6T fat free cream cheese 1/4c unsweet almond milk 1T sprinkles
Preheat oven to 350. Place 6 cupcake liners in a cupcake pan and spray liners with cooking spray. IN a small bowl, combine cupcake dry ingredients and sift together. In a separate medium bowl, combine cupcake wet ingredients. blend until smooth. Add cupcake dry ingredients except sprinkles to wet ingredients and mix with mixer for 1 min or until smooth. Gently stir in sprinkles. Pour cupcake mix into 6 liners. Bake 18-20 minutes. Remove and let cool. Mix icing ingredients (except sprinkles) until smooth. When cupcakes are cool, spread frosting on each cupcake. Top with sprinkles. 155cal, 17g protein
