     Brine for Smoked Fish

Ingredients
Boston Mackrel, Spot, Small Bluefish or Mullet
4 cups salt
1 Tblsp black pepper
4 cups sugar
1/2 cup vinegar
2 med onions, chopped
2 Tblsp Old Bay
2 Tblsp crushed red pepper
 
2 gallons water

Instructions
Mix and let stand for 2 hrs, stirring often. Add to fish and let soak for 8 hrs. Rinse and shake off excess water. Place on racks skin side down. Cook on low heat, 150 degrees, for 3 hrs with wood chips of choice smoke. Change rack about 3 times. Change chips 3 times, adding fresh chips each time. Increase heat to 275 degrees until fish starts to get brown. Cut off heat, let cool.
