     Pickled Fish

Ingredients
Desired kind of fish
Salt
Onion cut in slices and separated
Lemon sliced
Mixed pickling spices
3 cups vinegar
Water
 

Instructions
Sprinkle fish with salt and let stand for 12 hours. Wash. Place in boiling water for 2 minutes. Remove from boiling water and put in large bowl in layers. Between layers place onion rings and slices of lemon; sprinkle with pickling spices. Bring to a boil 3 cups vinegar and 1 cup water. While hot pour over meat. Let stand for 48 hours.
