     Banana Nut Bread

Ingredients
3 1/2 c sifted flour
3 tsp baking power
1 tsp baking soda
1 tsp salt
2 TBSP lemon juice
2 c very ripe banana
3/4 c butter
1 1/2 c sugar
3 eggs
 
3/4 c light cream
1 c walnut-chopped

Instructions
Preheat oven to 350F. Mix flour, baking powder, soda and salt. Add lemon juice to banana. Cream butter and sugar until fluffy Add eggs and beat well until very light and fluffy. Add dry ingredients alternating with cream and beating after each addition. Beat in banana. Fold in nuts.
Pour into 2 greased loaf pans Bake 1 hour. Cool in the pan for 10 minutes and then remove. Cool completely on a rack then wrap in foil and refrigerate overnight or freeze before slicing.
