     Sweet Potato Pie

Ingredients
3 lbs sweet potatoes
1 stick butter-softened
12 oz evaporated milk
2 c sugar
2 tbsp ground nutmeg
1 tbsp vanilla extract
6 large eggs
4 unbaked 9 in pie shells
 

Instructions
Scrub the potatoes and boil them until very tender about one hour. Drain. When cool enough to handle, peel potatoes and place them in a large bowl of a mixer. Add butter, milk, sugar, nutmeg, vanilla and eggs. Beat until smooth.
Heat oven to 375F. Pour filling into pie shells and bake until crust are golden brown. 30-35 minutes.
Serving Suggestions
Serve warm/room temperature with ice cream or sweetened whipped cream
