Ingredients
1/3 CUP CORN STARCH
1 CUP SUGAR
1 1/2 CUP WATER
3 EGGS, SEPERATED
1 1/2 TSPS LEMON RIND
1/3 CUP LEMON JUICE
1/4 TSP SALT
2 TBSPS BUTTER
1 BAKED 9 INCH PIE CRUST
 
MERINGUE

Instructions
HEAT OVEN 350 DEGREES MIX CORN STARCH AND 1/2 CUP SUGAR AND SALT IN DOUBLE BOILER TOP, AND SLOWLY STIR IN WATER. COOK OVER BOULING WATER UNTIL THICK, STIRRING CONSTANTLY.COVER AND COOK 10 MINUTES STIRRING OCCASIONALLY
BEAT EGG YOLKS AND 1/2 CUP SUGAR. BLEND HOT MIXGTURE INTO EGG YOLKS, STIR BACK INTO HOT MIXTURE. COOK 2 MINUTES MORE, STIRRING CONSTANTLY. REMOVE FROM HEAT AND STIR IN BUTTER, LEMON RIND AND JUICE. COOL
POUR INTO BAKED PIE SHELL, COVER WITH MERINGUE, SEALING TO EDGES OF PASTRY ALL AROUND, BAKE 12-15 MINUTES OR TILL PEAKS OF MERINGUE ARE GOLDEN BROWN
