Boil potatoes in their skins about 15-20 minutes. Cool. Shred potatoes and set aside. Sauté onion in butter; add cheese stirring till it melts. Add sour cream and mix well. Fold in shredded cooked potatoes (leave skin on). Add salt and pepper. Bake in a Pam sprayed 13 x 9 x 2 inch pan for 350 degrees or till heated through.
Can add crushed potato chips or crackers on top if you would like.
