Pierce potatoes; place on microwave safe plate and microwave for 8-10 minutes or until almost tender. Cool slightly then peel and cut into 1/8 inch slices. Arrange half of the potatoes in a Pam sprayed microwave safe pie plate (9 inch). Season with salt and pepper. Sprinkle with half of both cheeses. Repeat layers. Top with onions and olives. Microwave uncovered for 10 minutes or until cheese is melted and potatoes are tender. Serve with salsa and sour cream if desired.
